I realize that I have been SUPER awful at blogging. We've been really busy with all of the house stuff that's been happening and packing. We're 2 months behind on building which a lot has to do with the bitter winter we've had this year AND the fact that the framers had 2 of their 5 crews quit no notice, so I know it's not the builder's fault. It's very, very exciting that everything's rolling again.
I've been super busy and super lazy with cooking, too. I'm kind of ashamed - ha. I have been finding some pretty good recipes on Pinterest, though, and several of them are super easy. Would it be frowned upon if I just pasted the link and say what I did differently and my suggestions?

Here's the recipe (WITH pictures!!)
I used jasmine rice and I used regular 2% milk since that's what Brent has in the fridge for himself (I drink soy milk). I also sprinkled a little bit of cheese on the top before I laid the layer of cracker crumbs over it, then sprinkled some black pepper over the top after I put the cracker on. Popped 'er in the oven and baked it for 50 minutes. It came out perfectly..
Brent said he'd definitely eat it again.
The page says it makes four servings, when you put it in a 9x13 baking dish you think "How the hell does this feed only 4 people?" It does. Trust me.
I'll be eating this for leftovers tomorrow at work :)
